A dish that goes very well at breakfast, next to a cup of milk. I made it for 3 people.

  • -6 slices of bread
  • -2 eggs
  • -150 ml of milk
  • -pesmet
  • - berry jam {strawberries and raspberries}
  • -oil for frying

RECIPE PREPARATION Berries with berry jam:

Put eggs and milk in a bowl, mixing them well. Put the breadcrumbs on a plate. Grease the bread slices with jam and glue them two at a time.

Thus glued, we pass them through the mixture of milk and eggs and then we seal them. We fry them in hot oil for about 2 minutes on each side. They are wonderful, in the morning ...... the day already seems more beautiful to us!




Who was Pani Walewska or Countess Walewska?

Countess Maria Walewska (b. December 7, 1786, Brodne near Łowicz, Poland d. December 11, 1817, Paris) was a countess of Ornano, girlfriend of Napoleon I with whom she had a son Alexandre Colonna-Walewski. You can do more read here.

In memory of this Countess Marie Walewska, this Polish cake was created. PAIN it means "lady." The most famous film with this subject was "Conquest" (1937) starring Greta Garbo and Charles Boyer (I leave a short video at the end).

There is no "original recipe" for Pani Walewska Cake. To me, she's an ostrich-camel. A cross between the classic Figaro cake (see here)

and the famous Norwegian cake Verdens Beste & # 8211 The best in the world (see here). This is a rare finesse!

Basically Pani Walewska looks like Verdens Beste but is composed of two layers of Figaro filled with vanilla cream. Bizarre, I would say.

He didn't "turn his back on me." I'm a confectioner-pastry chef and I realize when something is wrong or doesn't work just by reading a recipe. So it was with the much-lauded Tort in Egypt which is nonsense from a "confectioner's" point of view. I explained here and why. In the end, this cake has the consistency of pudding or Tiramisu.

The same goes for this Polish cake with a famous name (Mrs. Walewska): the two sheets of tender dough are too crunchy for the delicate cream in the middle. I studied about 10 recipes on the internet (mostly Polish) and I saw that the quantities of ingredients vary a lot: some were made with 500 g of flour, others with 400 g (at the same dimensions of 33 x 42 cm of the tray), some had 6 yolks on the counter and only 2 in the cream, others did not provide for the previous baking of the dough before spreading with jam and meringue. The common denominator was the huge amount of sugar!

So I created my own version of Pani Walewska drastically cutting sugar from the counter and cream and following my instinct: to put 2 yolks in the dough and 4 in the vanilla cream. I'm sorry that I didn't reduce from the beginning the amount of straight dough for which I came out with a sheet that was too thick and a bit hard. Be sure to use black currant jam (or berry mix) because it "gives life to the cake." Don't go with magiun, apricot or cherry jam & # 8230 As Black Forest Cake it is made with cherries & # 8230 not with peaches or pineapple.

It will work perfectly for you because we have adapted the recipe to 375 g of flour and your sheet will be thin and tender.

From the quantities below results a 15 x 40 cm tray with Pani Walewska Cake.


Strawberry jam with lemon

The strawberry jam prepared according to this recipe perfectly combines the sweet taste of strawberries with a weak acidity of lemon. It is perfect not only for spreading on fresh bread, but also as a filling for pancakes.

To be prepared, you will need:

  • 400 grams of fresh strawberries
  • 100 grams of sugar
  • 2 lemons
  • 40 grams of gelatin.

As in the past, the recipe must carefully sort all the berries, removing the broken ones. Then they should be thoroughly washed and dried. Only then can you begin to remove the leaves and stems.

The subsequent process of making strawberry delicacies according to this recipe can be divided into the following steps:

  • First, all the grains must be combined with sugar and whipped with a blender. If not, then you can eat all the berries through a sieve, add sugar and mix well. The result should be a homogeneous, puree-like mass
  • Lemons should be washed and grated well on a fine peel of half a lemon. After that, you have to squeeze all the lemons. The resulting juice and lemon juice should be added to the berry puree
  • Gelatin should be added one last time. After adding it, the future blockage must be whipped again with a blender or broom
  • At this stage, the berry puree, mixed with all the ingredients, is poured into the pan. It should be boiled and boiled over medium heat for 2 to 5 minutes. It is very important not to forget to constantly mix the jam, and the mashed berries can be burned
  • The taste of the ready and cooled strawberry should be poured into sterilized jars and sealed with a lid.

These recipes will allow not only the commissioning of the remnants of the harvest, but also the saving of a summer heat for the winter.


  • 6 slices of bread
  • 150 ml of milk
  • 2 eggs
  • a pinch of salt
  • a cube of butter (30 g)
  • 2-3 tablespoons of oil

Use 1-2 days older bread, slice it and soak the slices in milk for the first time.

Beat the eggs well with a pinch of salt and pass the slices through the egg. Rotate them several times until the egg sticks to them because, being soaked in milk, the egg sticks harder.

In a pan, heat the oil with the butter and fry the slices on both sides until nicely browned. Then remove them on kitchen towels to absorb excess fat.

Eat them hot with jam, nutella or honey and fresh fruit. Enjoy!

Cake with berry jam

The cake with sour berry jam is a delicacy that is easy, fast and everyone likes. Try a simple recipe!

1. In the sifted flour with the baking powder quenched in lemon juice, put diced margarine and sugar. Mix well, cover with foil and leave to cool.

2. For the cream, bring the water to a boil and mix with the semolina until it starts to thicken. Allow to cool.

3. After the semolina has cooled, mix it with the sugar, vanilla, jam and breadcrumbs. Remove the crust, spread it on a suitable thick sheet, place it on the tray and spread the cream evenly.

4. Put in the hot oven and, 15 minutes before, sprinkle the sandy dough, which is obtained by mixing all the ingredients. Leave a little in the oven. The fruit jam cake is served garnished with candied or jam fruit and mint leaves.
