And because we like muffins so much, we thought of breaking the 'rules' and using their shapes to make a prosciutto omelette, which we pampered ourselves with one of these mornings.
- 4 eggs
- 4 tablespoons milk
- 6 slices of ham
- 2 sprigs of green onion
- 6 olives
- 2 cherry tomatoes
- a handful of diced cheese
- 1/4 teaspoon freshly chopped fresh / dried parsley
- salt and pepper
Preparation time: less than 60 minutes
RECIPE PREPARATION Omelette with prosciutto:
1. Mix the eggs with the milk. Beat well with the cheese, add the cheese, salt and pepper.
2. Chop the onion and olives, then put them over the eggs.
3. In a tray of muffins we put a slice of prosciutto, trying not to leave uncovered space (something we did not do too well :)).
4. We take a polish and carefully fill the forms.
5. Place a slice of tomato on top and place the tray in the preheated oven for about 20-25 minutes.
Preheat the oven to 180 & degC. Wallpaper with butter and baking paper or non-stick spray a 38 * 27cm tray. Mix eggs with grated cheese, salt, pepper, herbs. Pour the composition into the pan and bake for 10-15 minutes or until the omelet is well bound and slightly golden.
We turn it over on a plate, cover it with plastic food foil and let it cool for 5 minutes. Place the cheese slices, then the ham slices and roll as tight as we can. Wrap the roll in foil and let it cool for 10 minutes.

Break the eggs in a bowl and preheat the oven to 190 degrees.
